Elsa (pop. 5,668 in the 2020 census) is a small citrus-and-farming town on the east side of the metro with one of the Valley's tastiest claims to fame: the Ro-Tel brand of tomatoes and green chiles — a staple of Tex-Mex cooking — began here in 1943. Settled as ranch land before 1800 and laid out with the coming of the Texas and New Orleans Railroad in 1927 (incorporated 1940), Elsa remains a quiet, affordable community surrounded by groves and fields.
